Apple Cinnamon Baked Oatmeal Cups

 


 

๐ŸŽ๐Ÿง A cozy, grab-and-go breakfast full of warm spices and naturally sweet apple chunks!

Ingredients

๐ŸŒฑ Makes 6–8 cups

  • 2 cups rolled oats (gluten-free if needed)

  • 1 tsp ground cinnamon

  • ½ tsp baking powder

  • ¼ tsp ground nutmeg (optional)

  • A pinch of salt

  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)

  • 1¼ cup plant-based milk (almond, oat, etc.)

  • 2 tbsp maple syrup (or more to taste)

  • 1 tsp vanilla extract

  • 1 medium apple, peeled and finely chopped

  • Optional toppings: hemp seeds, chopped walnuts, or raisins

Instructions

๐Ÿ Prep + bake time: 30–35 minutes

  1. Preheat oven:
    Set oven to 180°C (350°F). Lightly grease or line a muffin tin.

  2. Mix dry ingredients:
    In a large bowl, combine oats, cinnamon, baking powder, nutmeg, and salt.

  3. Prepare flax egg:
    In a small bowl, mix ground flax with water and let sit for 5 minutes.

  4. Combine wet ingredients:
    Add flax egg, plant-based milk, maple syrup, and vanilla to the dry mix. Stir well, then fold in chopped apple.

  5. Scoop and bake:
    Divide the mixture evenly into muffin cups. Add any toppings if desired. Bake for 25–30 minutes or until firm and golden on top.

  6. Cool and enjoy:
    Let cool for 5 minutes before removing. Store leftovers in the fridge for up to 5 days.
