๐๐ง A cozy, grab-and-go breakfast full of warm spices and naturally sweet apple chunks!
Ingredients
๐ฑ Makes 6–8 cups

2 cups rolled oats (gluten-free if needed)

1 tsp ground cinnamon

½ tsp baking powder
-
¼ tsp ground nutmeg (optional)

A pinch of salt
-
1 flax egg (1 tbsp ground flax + 3 tbsp water)

1¼ cup plant-based milk (almond, oat, etc.)

2 tbsp maple syrup (or more to taste)

1 tsp vanilla extract
-
1 medium apple, peeled and finely chopped

Optional toppings: hemp seeds, chopped walnuts, or raisins
Instructions
๐ Prep + bake time: 30–35 minutes

Preheat oven:
Set oven to 180°C (350°F). Lightly grease or line a muffin tin. -
Mix dry ingredients:
In a large bowl, combine oats, cinnamon, baking powder, nutmeg, and salt. -
Prepare flax egg:
In a small bowl, mix ground flax with water and let sit for 5 minutes. -
Combine wet ingredients:
Add flax egg, plant-based milk, maple syrup, and vanilla to the dry mix. Stir well, then fold in chopped apple. -
Scoop and bake:
Divide the mixture evenly into muffin cups. Add any toppings if desired. Bake for 25–30 minutes or until firm and golden on top. -
Cool and enjoy:
Let cool for 5 minutes before removing. Store leftovers in the fridge for up to 5 days.
