⚡๐ฅ A naturally sweet and energizing snack packed with protein, fiber, and plant-powered nutrients — no baking required!
Ingredients
๐ฑ Makes about 12 balls

1 cup soft Medjool dates (pitted)

½ cup raw almonds or walnuts
-
2 tbsp hemp seeds
-
2 tbsp pumpkin seeds (pepitas)

1 tbsp chia seeds
-
1 tbsp raw cacao powder (optional)
-
1 tbsp shredded coconut (plus more for rolling)

1 tbsp nut butter (almond, peanut, or sunflower)

½ tsp cinnamon
-
Pinch of sea salt

1–2 tsp water (only if needed for blending)
Instructions
๐ Total time: 10–15 minutes

Process:
In a food processor, combine dates and nuts. Pulse until crumbly. Add hemp seeds, pumpkin seeds, chia, cacao, coconut, nut butter, cinnamon, and salt. Blend until sticky and well combined. If mixture is too dry, add a teaspoon of water. -
Form balls:
Scoop out 1 tbsp portions and roll into balls. If desired, roll in extra coconut, cacao, or crushed seeds for coating. -
Chill & store:
Place in an airtight container and refrigerate for at least 30 minutes. Store in the fridge for up to 1 week.
๐ Prep Tip
Soak your dates in warm water for 5 minutes if they're too dry — it’ll make blending easier and the balls more moist.
