Ingredients

1 tbsp olive oil

1 small onion, diced

2 garlic cloves, minced

2 carrots, sliced
-
2 celery stalks, sliced

1 zucchini, diced
-
1 cup chopped tomatoes (fresh or canned)

¾ cup dry green or brown lentils (rinsed)

4 cups vegetable broth or water

1 tsp dried thyme or Italian herbs

1 bay leaf (optional)

Salt & pepper, to taste

Handful of chopped spinach or kale (optional, added at the end)

Juice of ½ lemon (optional, for brightness)
Instructions
๐ฒ Total time: 40–45 minutes

Sautรฉ the aromatics:
In a large pot, heat olive oil over medium heat. Add onion and garlic, and sautรฉ for 2–3 minutes until fragrant. -
Add the vegetables:
Stir in carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally. -
Simmer the soup:
Add lentils, chopped tomatoes, broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let simmer uncovered for 25–30 minutes or until lentils are tender. -
Finish and serve:
Stir in spinach or kale if using, and let wilt for 2–3 minutes. Add lemon juice, adjust seasoning, and serve warm.
