Hearty Lentil & Vegetable Soup

Ingredients

๐ŸŒฑ Serves 4

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 1 zucchini, diced

  • 1 cup chopped tomatoes (fresh or canned)

  • ¾ cup dry green or brown lentils (rinsed)

  • 4 cups vegetable broth or water

  • 1 tsp dried thyme or Italian herbs

  • 1 bay leaf (optional)

  • Salt & pepper, to taste

  • Handful of chopped spinach or kale (optional, added at the end)

  • Juice of ½ lemon (optional, for brightness)

Instructions

๐Ÿฒ Total time: 40–45 minutes

  1. Sautรฉ the aromatics:
    In a large pot, heat olive oil over medium heat. Add onion and garlic, and sautรฉ for 2–3 minutes until fragrant.

  2. Add the vegetables:
    Stir in carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally.

  3. Simmer the soup:
    Add lentils, chopped tomatoes, broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let simmer uncovered for 25–30 minutes or until lentils are tender.

  4. Finish and serve:
    Stir in spinach or kale if using, and let wilt for 2–3 minutes. Add lemon juice, adjust seasoning, and serve warm.
