๐ฒ๐ฟ A comforting and wholesome Italian-inspired soup, loaded with colorful veggies, beans, and rich tomato flavor.
Ingredients
๐ฑ Serves 4

1 tbsp olive oil
-
1 small onion, diced
-
2 garlic cloves, minced
-
2 carrots, diced
-
2 celery stalks, chopped
-
1 zucchini, chopped
-
1 cup green beans, trimmed and cut
-
1 cup chopped kale or spinach
-
1 can (400g) diced tomatoes
-
1 can (400g) mixed beans or cannellini beans, drained and rinsed
-
4 cups vegetable broth
-
½ tsp dried oregano
-
½ tsp dried basil
-
Salt and pepper, to taste

Optional: ½ cup small pasta (gluten-free if needed)
Instructions
๐ฅ Prep + cook time: 30–35 minutes

Sautรฉ the aromatics:
In a large pot, heat olive oil. Add onion and garlic, and sautรฉ for 2–3 minutes until fragrant. -
Cook the veggies:
Add carrots, celery, zucchini, and green beans. Stir and cook for 5 minutes. -
Simmer:
Pour in diced tomatoes, beans, broth, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes. -
Add greens and pasta (if using):
Stir in kale or spinach and pasta (if using), and cook until tender (about 8–10 minutes more). -
Serve:
Ladle into bowls and enjoy warm, optionally topped with fresh herbs or nutritional yeast.
