Ingredients

For the salad:

3 cups chopped kale, stems removed

1 apple (red or green), thinly sliced

¼ cup walnuts or pecans, roughly chopped

2 tbsp pumpkin seeds or hemp seeds
-
2 tbsp dried cranberries or raisins (optional)

Juice of ½ lemon (for massaging kale)
For the maple mustard vinaigrette:

1 tbsp Dijon mustard

1 tbsp maple syrup

2 tbsp apple cider vinegar

2 tbsp olive oil

Salt and pepper, to taste
Instructions
๐ Prep time: 10–15 minutes

Massage the kale:
Place chopped kale in a bowl with lemon juice. Gently massage with your hands for 1–2 minutes until the leaves soften and turn dark green. -
Mix the vinaigrette:
In a small bowl or jar, whisk together Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt, and pepper until well combined. -
Assemble the salad:
Add apple slices, nuts, seeds, and cranberries to the kale. Drizzle with vinaigrette and toss to coat evenly. -
Serve:
Enjoy immediately or let sit for 10 minutes to allow flavors to meld beautifully.
