Kale and Apple Salad with Maple Mustard Vinaigrette

 


 

๐ŸŽ๐Ÿฅ— A fresh, crisp, and flavorful salad that balances earthy kale with sweet apples and a zesty vinaigrette.

Ingredients

๐ŸŒฑ Serves 2

For the salad:

  • 3 cups chopped kale, stems removed

  • 1 apple (red or green), thinly sliced

  • ¼ cup walnuts or pecans, roughly chopped

  • 2 tbsp pumpkin seeds or hemp seeds

  • 2 tbsp dried cranberries or raisins (optional)

  • Juice of ½ lemon (for massaging kale)

For the maple mustard vinaigrette:

  • 1 tbsp Dijon mustard

  • 1 tbsp maple syrup

  • 2 tbsp apple cider vinegar

  • 2 tbsp olive oil

  • Salt and pepper, to taste

Instructions

๐Ÿ Prep time: 10–15 minutes

  1. Massage the kale:
    Place chopped kale in a bowl with lemon juice. Gently massage with your hands for 1–2 minutes until the leaves soften and turn dark green.

  2. Mix the vinaigrette:
    In a small bowl or jar, whisk together Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt, and pepper until well combined.

  3. Assemble the salad:
    Add apple slices, nuts, seeds, and cranberries to the kale. Drizzle with vinaigrette and toss to coat evenly.

  4. Serve:
    Enjoy immediately or let sit for 10 minutes to allow flavors to meld beautifully.
