๐ฅ๐ฟ A fresh, zesty salad packed with protein-rich chickpeas, colorful veggies, and fragrant herbs.
Ingredients

1 can (400g) chickpeas, drained and rinsed

1 small cucumber, diced

1 cup cherry tomatoes, halved

¼ red onion, finely chopped

½ red bell pepper, diced
-
¼ cup chopped fresh parsley

2 tbsp chopped fresh mint

1 tbsp chopped fresh basil (optional)

Juice of 1 lemon

2 tbsp extra virgin olive oil

Salt and pepper, to taste

Optional: a handful of Kalamata olives, pitted and sliced
Instructions

Combine ingredients:
In a large bowl, mix together chickpeas, cucumber, tomatoes, red onion, bell pepper, and herbs. -
Dress the salad:
Drizzle with lemon juice and olive oil. Season with salt and pepper. Toss gently to combine. -
Chill or serve immediately:
Let sit for 10–15 minutes to allow flavors to blend, or enjoy right away.
