Mediterranean Chickpea Salad with Herbs

 


 

๐Ÿฅ—๐ŸŒฟ A fresh, zesty salad packed with protein-rich chickpeas, colorful veggies, and fragrant herbs.

Ingredients

๐ŸŒฑ Serves 2–3

  • 1 can (400g) chickpeas, drained and rinsed

  • 1 small cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ¼ red onion, finely chopped

  • ½ red bell pepper, diced

  • ¼ cup chopped fresh parsley

  • 2 tbsp chopped fresh mint

  • 1 tbsp chopped fresh basil (optional)

  • Juice of 1 lemon

  • 2 tbsp extra virgin olive oil

  • Salt and pepper, to taste

  • Optional: a handful of Kalamata olives, pitted and sliced

Instructions

๐Ÿ‹ Prep time: 10 minutes

  1. Combine ingredients:
    In a large bowl, mix together chickpeas, cucumber, tomatoes, red onion, bell pepper, and herbs.

  2. Dress the salad:
    Drizzle with lemon juice and olive oil. Season with salt and pepper. Toss gently to combine.

  3. Chill or serve immediately:
    Let sit for 10–15 minutes to allow flavors to blend, or enjoy right away.
